I used to do a lot of crafting and selling the results, but frankly that's just too much effort for not enough money. In this day and age, raw materials sell for A LOT more than any finished product. Especially with the recent "crafting gives XP" changes, people on my server have been going nuts buying up low-level ore more so than in the past and people are willing to pay a lot more than 5G per stack for most items.
Sure, no new player could afford those prices with their own pocket change; but all they have to do is sell 1 single stack of whatever they farm themselves and they'll have more than enough money to buy whatever they needed in the first place.

Today you post merchandise to the AH and you make that low asking price in the hope of competition. Only thing is that really often the first bid comes just before the auction is closed.

As for new players, I love inflation in games when I am new. I remember how hard to was to get the 4. Now I have 4. Anything you want to buy from any merchant including repairs is unbelievably cheap now thanks to the inflation on the auction house. And the reality is there are still plenty of cheap items on the auction house as well.
You can regularly find weapons and armor on the auction house for low prices. There may not always be something cheap at a particular level, but since you can get everything you need from playing the game anyway, if the auction house has nothing for you at a price you are willing to pay you just leave the auction house and keep playing the game.
Another part of being a new player is gathering resources. If you are a first time player and make a woodsman you should not expect to raise woodworking without gathering at least some of your own wood. In fact, most players probably would not want to buy it. When you first start a new game, gathering resources is fun.
It is not until later when you find how worthless rowan wood is that gathering it is not interesting any more, but by that time you probably have enough to finish your tier 1 woodworking and move on. Resources in the auction house are for alts. The resources are for people that have already spent time gathering low level resources and no longer have an interest in doing so.
They also have the money to pay someone else to gather the resource for them. There are exceptions to this of course. My characters are always training their crafts in tiers too high for them to gather the resources themselves so I normally do buy resources at the auction house even for my first character.
